El Pollo Loco Creamy Cilantro Dressing

Sliced chicken breast, romaine lettuce, pico de gallo, tortilla strips, and cotija cheese make up El Pollo Loco's Caesar Salad, but it is the fantastic creamy cilantro dressing that gets the raves.

1 cup mayonnaise
1/3 cup whole milk
4 tsp. finely minced fresh cilantro
2 tsp. lime juice
1 tsp. white vinegar
1 tsp. granulated sugar
1 tsp. finely minced garlic
1 tsp. finely minced onion
1/2 tsp. salt
1/8 tsp. cayenne pepper
1/8 tsp. ground black pepper
1/8 tsp. ground cumin

Whisk together all the ingredients in a medium bowl. Cover and chill until you;re ready to serve it.

MAKES 1¼ CUPS.

  1. This is OK, but I have made this exact recipe and tested it side by side with a small cup of the real thing from El Pollo Loco and there is absolutely no comparison. The mayonnaise takes over the flavor completely. Using Ranch Dressing instead of Mayo with less additional seasonings and adding some Parmesan cheese works a lot better.

  2. I make this recipe cuz it's the only one I can find. It tastes good, but it's definitely not the same as EPL, I don't even have to taste it side by side to tell the difference. I cut the lime in half.

  3. This is nowhere close to El Pollo Loco's. Here is the closest I've found - actually El Torito's version, and it is very, very good.

  4. Nope , I doubt el pollo loco makes their dressings from scratch . That is watered down Ceasar dressing with cilantro.

    1. I worked there for a few years. its not watered down, but the creamy cilantro is just Caesar dressing with cilantro added to it.

  5. I made this but used about 3 good handfuls of cilantro, 4 tsp of lime juice and 3 cloves of garlic. Throw it all in a blender and it comes out great!
